    ***July 2019 Group Recipe Challenge: Tomatoes***

    I love vintage recipes, especially ones shared by famous celebrities. The meatballs are worthy of 10 Stars. BEST meatballs ever! The only problem I had with the meatballs was that I ate half of them before dinner. lol! This is going to be my “go to” standard meatball recipe from now on. The sauce was just okay. I was worried it wasn’t going to be thick, but it’s plenty thick! I felt like it was missing something. Maybe needs more garlic or sugar? I am overly sensitive to the metal taste that comes from canned goods, especially tomato sauces and paste. I think that’s the taste I’m trying to counter. Most people probably wouldn’t even notice. I was worried about the amount of green pepper and onions used as it seems like a lot. It turned out to be just fine. However, I only used 1 large onion instead of 2. Define large. The onion I used yielded three times as much as the green pepper. It says to coarsely grate the vegetables which to me is the same thing as finely chopped. That’s what I did and no need to squeeze off the liquid. Otherwise, I followed the recipe. Served over zucchini noodles and topped with Pecorino Romano cheese. YUM! Having leftovers tonight. Unfortunately, the meatballs are gone. :( Using Italian Sausage instead.

    Lol at eating half the meatballs, a good testament to the meatball recipe! I buy tomato sauce in glass jars only, and use the concentrated tomato paste in the tube. I too find the metallic taste, especially in tomato paste for some reason--but not in whole tomatoes or chopped tomatoes? go figure, Lol ;) . If you cook the tomato paste with the onions for awhile until it turns a darker color I find the metal taste goes away. But most recipes do not call for cooking the tomato paste down before adding the other liquids or sauce.
    I bet the Italian sausage meatballs will be more delicious, yum!

    Thank you, Cosmicmother! It's so good to see you! :) I think you and I have very similar taste buds. I am the same way. Paste is worse, whole or diced tomatoes not so bad when it comes to the metal taste. I raise a garden and can my own tomatoes so everything is in glass. Last year I had a bunch of San Marzano tomatoes and didn't know what to do with them. I put them in a pot and let them simmer all day until they turned into a thick paste. Then froze the paste. It was so good that I planted extra San Marzanos this year so I'll be sure to have enough to make paste. Right now I'm out of homemade products and relying on canned goods in the short term.

    We are a once a month spaghetti and meatballs family. Always looking for new recipes, bookmarked this one! I have seen tomato puree (I think similar to sauce) in a glass jar at the store. That sucks that the taste of the can bothers you. More sugar though may have helped?

    Mommyluvs2cook-- I've always had a taste sensitivity to things like metal or chemical tastes. As a kid I wouldn't eat Hamburger Helper, boxed mac 'n cheese, Jell-O products, etc. Cool Whip has a bitter chemical taste to me. Hubby thinks I'm weird, but he's getting to where he can notice a difference and will make a comment when something tastes off.

    Thank you, LindaLMT! I was lazy with the leftovers and just sliced and sauteed the zucchini. Worked just as good!
